Bourbon Cornmeal Christmas Cookies

MIXOLOGY LEVEL: Intermediate

PREP TIME: 20 minutes

YOU’LL NEED:

2 C Butter
1 C White Sugar
1 C Brown Sugar
1 C Bourbon Barrel Smoked Sugar
2 T Salt
1 T Vanilla
3 T Jeptha Creed 4-Grain Straight Bourbon
4 Eggs
4 C Flour
1 T Baking powder
1 T Baking soda
1 C Bloody Butcher Cornmeal
4 C Chocolate Chips

PREP:

Preheat oven to 350 degrees
Cream butter and sugar until light and fluffy.  Add in egg, salt and vanilla beat until smooth. Add flour, baking powder, baking soda, cornmeal, bourbon, and mix, scraping down the sides as you go.  Fold in the chocolate chips.  Chill the dough for at least 1 hour or until stiff.  Pan spray a cookie sheet and dust with flour, knocking off any excess.  Scoop dough to the desired size, form into the shape of a hockey puck in your hand.  Bake for 10-15 minutes until they just start to brown, pull from oven and let carry over a bit on the pan.  Use a spatula to remove from pan and cool completely.
